What’s pink, puffed, and purrrr-fectly delicious? My easy-to-make Strawberry Soufflé! I love this dessert so much that I made a video of the recipe for you. I hope you enjoy it.

This souffle looks and tastes like a strawberry scented cloud. Make it for yourself, or for someone you love.
Ingredients
- Unsalted butter, for greasing the souffle dish and its foil collar (see "notes" below)
- Granulated sugar, for dusting the dish
- 2 cups strawberry puree (obtained from one quart fresh, or 1 1/2 pounds of frozen, thawed berries)
- The whites of 5 large, local eggs, at room temperature
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1 heaping tablespoon corn starch
- 1 1/2 cups super-fine ("instant-dissolving") sugar
Instructions
- Center the oven rack, and preheat the oven to 425°F. Butter an 8 cup souffle dish, and dust it with granulated sugar. Then attach a buttered "collar" around the dish (see "notes" below.)
- Puree the berries in a food processor or electric blender. Transfer the berries to a medium bowl and set aside (you should have 2 cups of puree).
- In a large bowl, beat the egg whites at low speed. When the whites begin to foam, add the cream of tartar. At high speed, beat in the salt and corn starch. When the whites produce soft peaks, gradually beat in the super-fine sugar. Continue beating until the whites form stiff peaks.
- Stir a large spoonful of the beaten whites into the pureed berries, just to the lighten them. Then add the puree to the bowl of egg whites, and fold with a spatula just until blended.
- Pour the mixture into the prepared souffle dish. Put the souffle in the preheated oven, and then immediately lower the temperature to 375°F degrees. Bake until the souffle rises, and a golden brown crust forms on top -- 45-55 minutes.
- Remove the foil collar, and serve at once.
NOTES: For the souffle dish, use any round, fairly straight-sided baking dish that will hold 6-8 cups. Or, use an 8-cup Charlotte mold. To make a collar for the dish, simply tear off a long sheet of aluminum foil. Fold the foil in half, grease it with butter, and wrap it around the dish. Secure the collar with a common pin.

I’m getting chickens for Valentines Day! We will be picking up eight beautiful Buff Orpington ladies. The Husband had a local Amish gentleman make me a beautiful chicken coop with a large attached run for our 25th wedding anniversary so it seems only right that we start our flock on Valentines Day.

You really do make shuffle look easy. I might make it for my granddaughter for her birthday in May. I’ll get fresh strawberries from my cousins patch. Danielle loves strawberries and likes anything strawberry for her birthday. On Valentine’s Day I will work and come home to rest for the next day. I’ve been single too long to celebrate couples day.

Hi Tracie – A 6-cup baking dish should work just fine if you pin a foil “collar” around it. Enjoy the soufflé!
