Yesterday marked three momentous events: 1) J.S. Bach’s 333rd birthday; 2) the first day of spring, and 3) my blog’s 9th anniversary! To celebrate, I filmed my favorite sheet pan dinner for you. The dinner is a variation on the Asian Chicken and Veggies recipe I published back in 2017, and boy howdy — it’s scrumptious! It’s also fast and easy to prepare. Tender chicken thighs and colorful vegetables cooked to perfection on a single sheet pan. Serve over brown rice or cauliflower rice. Delicious and easy!
Ingredients
- 1/3 cup Tamari sauce (or, use soy sauce)
- 1 heaping tablespoon cornstarch
- 3 tablespoons white wine vinegar (or use dry white wine or rice vinegar)
- 3 tablespoons olive oil (plus more for drizzling)
- Sambal Olek -- 2 tablespoons, or to taste
- 4 skinless, boneless chicken thighs, cut into bite-size pieces
- 1 red or white onion, sliced
- 1 red bell pepper, roughly chopped
- 1 orange bell pepper, roughly chopped
- Florets from 2 or 3 small crowns of broccoli
- Pure sesame seed oil -- a few splashes for each serving
Instructions
- Center the oven rack, and heat the oven to 425°F. In a medium bowl, whisk together the Tamari sauce and cornstarch until smooth. Then whisk in the vinegar, olive oil, and Sambal Olek. Add the cut up chicken thighs to the bowl, and stir them to coat. Let the chicken marinate for at least 5 minutes. Meanwhile, chop up the vegetables.
- Tip the vegetables onto a large baking sheet, and drizzle them with olive oil. Toss the vegetables until all are slick with oil. Use a slotted spoon to scatter the chicken pieces over the vegetables. Then pour the remaining marinade over all, and finish with another drizzle of olive oil.
- Bake in the preheated oven until the chicken is done, and the vegetables are tender-crisp -- usually 25 minutes. Serve over brown rice, and top with a few splashes of the sesame seed oil.

The chicken recipe looks delicious but it seems to have too much oil. Why do you need to drizzle more olive oil before placing the pan in the oven?

Hi, Kevin — Every week we get together with our best friends for an afternoon of cards and/or dominos and then dinner (one week at our place, one week at theirs) and I’m always looking for dinner ideas that I can fix ahead so that I don’t have to take much time away from the games. I really enjoy making sheet pan dinners. Fast, delicious and very little clean up. This recipe would also be great with chicken sausage or pork chops or just lots more vegetables.
We usually have roasted vegetables at least once a week. Any planned overs make a great salad addition or a omelet topping.

This is so close to my stir fry – except I add a can of chunk pineapple to mine – using the liquid from the pineapple as the base for my cornstarch – Your version will be my winter in-the oven-keeping-the-kitchen-warm stir fry replacement! Thank you for the change up. Still chilly here in MA, so your version will be tried very soon; I can almost taste happiness.
Once in a great while I will get out the fancy twirled shaped tea cup and pack the rice in it & then up-end in the center of the individual plates & serve the stir fry around it, drizzling a little soy sauce over the rice.

Hi Tracy – Sambal Olek is a type of chili paste. Supermarkets (usually) stock it in the same area as soy sauce and tamari sauce.

This looks like a real tasty dish. My only concern is that darned aluminum foil. I encourage you to switch over to parchment paper, avoid the contribution to Alzheimer’s disease.

Hello Kevin–! Love to watch your videi! Tho I’m allergic to peppers I thought I might mix it up and sub dome veggies to achieve a similar effect. Will be using those yellow and green zucchinis, and blue lake green beans and might try some cherry tomatoes for color. In the marinade instead of the pepper zing, I’ll use ginger! Ill also be changing up the rice snd usung some arborio and wilted raindow swiss chard!!Thank you so much!! Love you

We have made this recipe with our new 12 cup Cuisinart Food Processor , I have to confess about 6 times now. We even made it for my son in laws Birthday , so easy and you will get good compliments on this dish . I was not familiar with Sambal Oelek before . So incredibly delicious. Kevin you were right, I never liked the dark meat on the chicken until now. We also make it meatless and just add mushrooms to the mix. I would like to see some meatless recipes and do you have a cauliflower pizza crust recipe ? we have also made home made pizza crust in the Cuisinart . Thanks Kevin for all of your tips and great recipes. i have been a from scratch baker and cook forever . Your recipes are simple and delicious. Did I go over the word limit ?
