Happy day-after-Thanksgiving Day! I hope your holiday was filled with friends, family, and delicious food. To celebrate, Mr. Fox and I hosted a very small dinner party that included some of our favorite things:

A warm fire in the dining room (the temperature outside had plunged to 12°F!)…
A dry-brined turkey…
That provided a delicious stock…
For this Roast Turkey with Apple Gravy.
I broke my diet in order to eat this magnificent stuffing…
And to worship at the altar of this angelic cranberry sauce.
Meanwhile, our dear friend Sarah Kilbourne contributed her grandmother’s heirloom Creamed Onions with Poppy Seeds, plus some fabulous Shaved Brussels Sprouts with Pine Nuts. Sarah also contributed her marvelous company!
For dessert, I whipped up a Pumpkin Souffle that you’ve just gotta try.

This year I spatchcocked my turkey. Roasted a 12 pounder in 80 minutes. Love your brine technique, and it looks delicious. Do you think I could brine like you did and then the night before, when taking it out of the bag, spatchcock it then? Thanks for all your techniques and recipes. xo
