Roasting intensifies the flavor of strawberries. Serve this simple condiment on yogurt, ice cream, pancakes, waffles, and more. (It's delicious on everything.)
Ingredients
- 1 pound fresh strawberries
- 1/2 cup sugar
Instructions
- Center the oven rack, and preheat the oven to 450°F. Wash and hull the strawberries. Cut large berries into quarters. Cut medium and small berries in half. Put the berries in a bowl, add the sugar, and toss with a spatula to coat. Transfer the works to a baking dish, and roast in the preheated oven until the juices bubble and the berries turn soft and fragrant -- usually 18-20 minutes. Let cool for at least 10 minutes before serving.
STORAGE NOTE: When the berries approach room-temperature, transfer them and all of their juices to a jar. Cover the jar and refrigerate for up to 3 weeks.

I just did this and am now sitting in a very smoky house. After 18 minutes in properly working oven, when I opened oven door the berries were bubbling all over the dish and on the hot oven floor causing me to self clean oven when done. I was not told to check stir or anything. Very disappointed in this failed recipe attempt!

Hi Carl – Sorry to read that your berries bubbled over and made a mess. This is a fairly universal recipe for roasted strawberries, so not sure why it didn’t work out for you. If you try it again (and I hope you will!) you can put the baking dish on a cookie sheet, and check after 15 minutes. Or, reduce temperature if you suspect your oven is running “hot.”

Kevin, I loved watching you in this video! Thanks for the great idea for higher protein, less carb pancakes. I avoid high carbs in my diet, so these sound great! I am going to try them!
By the way, I eat farmer cheese for breakfast every morning, and frequently make my own. I have problems with lactose, and farmer cheese has very little lactose. Also, most of the whey is removed. Homemade farmer cheese is delicious! My grandparents were from Eastern Europe, and I know my grandmother made her own. Used in blintzes. I had store-bought growing up, which my mom bought since it was available at the deli in the supermarket. Also, she bought “Pot Cheese”. No one I ask has ever heard of it. Similar to farmer cheese.
WHAT DO YOU THINK: Farmer cheese is much thicker than cottage cheese. If I used it in the pancake recipe, I would have to add some type of liquid, right? Milk, I guess?

I have roasted strawberries in the past. They are wonderful! I served a triple strawberry sundae for dessert once and everybody loved them. Strawberry ice cream, roasted strawberries and strawberry whipped cream. Just strain some of the roasted strawberry liquid and add to the heavy cream while whipping. Beautiful to look at and scrumptious. I’ll be making these cottage cheese pancakes for breakfast tomorrow. Can’t wait!

I love the cottage cheese pancake recipe and will try it soon. I make a short-cut version of your strawberries, often adding blueberries as well. Because I love berries so much I keep a constant store of frozen berries on hand (using the fresh berries when they are in season or for special dessert presentations). Generally I mix the berries and cook them (no added sugar) in the microwave, and use the “sauce” to top everything that you do, plus oatmeal, cake, blintzes etc. If I want more sweetness I add a little maple syrup. Thanks for your recipes and ideas. It is fun to see you “in person”. Scritches behind the ears for Lily.

To Carl Williams: Yes, they bubble up quite a bit. You need to put them in a deeper dish. Then when they rise they won’t boil over. Try a casserole dish.

They looked terrific. I am going to try a variation, which may not be as good as the original. I’m diabetic. Strawberries are good for diabetics, but not the sugar. I’ll use stevia and see what happens. The result may not be as tasty since only the strawberry’s natural sugar will be able to caramelize, but I’ve become used to eating things that aren’t as sweet. I’ll also watch them as they cook to make sure they don’t burn without the added sugar. However, I will make this as you’ve made it for my grand daughter.

Kevin, DID YOU KNOW that Strawberries are a goitrogenic food? This means that ingesting large quantities may make one’s thyroid work harder. Being Hypothyroid, my doctor advised me to cook foods in the goitrogenic category to reduce their ill effects. The list of foods labeled goitrogenic is pretty long so I won’t type it here, but surfing up the term Goitrogen will inform readers who may be curious about what other foods may affect one’s thyroid. For quite some time, I have been cooking my strawberries for immediate use on cold cereal, oatmeal, yogurt, fruit salads and trifles. I am glad to see this recipe! xoxoxoxox

I had no idea strawberries were red in the middle!! Anyway, this recipe puts me right back on strawberries and I am so excited.
