Video: Eggs in Sweet Potato Nests

What’s so great about these eggs in sweet potato nests? Everything! They’re glamorous. They’re healthy. They’re knock-your-socks-off delicious. Serve them for brunch, lunch, or dinner, and everyone will think you’re a genius. Here’s the step-by-step in both video and printable format:

Video: Eggs in Sweet Potato Nests

Prep Time: 10 minutes

Cook Time: 25 minutes

Yield: 6 servings

These healthy nests are easy to make, and glamorous to serve. Serve them for a simple weekday supper, a classy weekend brunch, or for breakfast on-the-go!

Ingredients

  • 2 large sweet potatoes (about 2 lbs total), scrubbed but not peeled
  • 3 tablespoons vegetable oil (olive, coconut, or your choice)
  • Kosher salt and freshly-ground black pepper
  • Optional: Non-stick spray (for greasing a muffin tin)
  • 6 large eggs
  • For garnishing: crisp, crumbled bacon and minced, fresh parsley -- a large pinch for each egg

Instructions

  1. Center the oven rack; preheat oven to 350°F. Shred the potatoes on the large-hole disk of a food processor (or use a box grater). Heat the oil in a large skillet over medium heat. Tip the potatoes into the skillet, and toss them with a generous 1/4 teaspoon kosher salt. Saute the potatoes until tender but not mushy -- about 7 minutes. Let cool for 5-10 minutes.
  2. Grease (or spray with vegetable spray) the openings of a muffin tin. Put the tin on a baking sheet. Scoop approximately 1/2 cup of potato shreds into each opening, and press them, with your fingers, against the bottom and sides to create a "nest." Tip 1 egg into each nest, and dust lightly with salt and pepper.
  3. Bake in the preheated oven until the eggs are done -- 20-25 minutes. To unmold, first run a small knife around the edge of each nest. Then slip the knife under the nest, and lift up. Garnish the eggs with the crumbled bacon and minced parsley. Serve hot, warm, or even cold.

    Merry Christmas Kevin and Mr. Fox – and your entire menagerie that add so much warmth and excitement to your home. Princess Sophie will be traveling and visiting a lot during the holidays. Everyone insists they want to see her despite her years – she still is spirited.

    I love the way this simplifies one of my favorite combinations. I’ve made sweet potato fritters topped with poached eggs – harder to do for a crowd. This method is top of my ‘try it’ list over the holidays, and I’ll be serving it with smoked salmon. Yum!

    This looks so good and simple to make. I have made something similar to this using buttermilk biscuits in the place of the sweet potatoes. Your version looks just as good and much more healthy. I want to give this a try. Kevin, in your video you mentioned that one of your cats was meowing. I hope we get to see it in the future.

    Happy New Year! Made these today. (Hardest part was finding the disk for the food processor – why did I store it WAY UP there?) Anyhoo, results were beautiful and tasty. Bacon and a sprinkle of green are a must! Next time, I might season the potatoes with a dash of Slap Ya Mama or Tony Chachere’s and use a medium egg to prevent overflow. Thanks KLJ!

    Kevin, I was in the process of reviewing old emails, many of which were yours, that I had saved to peruse later, when I happened upon this recipe, coincidentally that you posted exactly one year ago today…haha!
