NEED SOMETHING FAST FOR DINNER? Wanna make your kids an extra-special after-school treat? I can help you out! Here’s a round-up of my favorite late-summer, early-fall recipes:
Angelic Zucchini Fritters. One bite of these crisp, lemony, perfect-for-anytime treats, and you’ll hear a choir of angels sing. The recipe.

Chicken & Mushrooms in Tarragon Cream. A fast and easy saute, gloriously-enrobed in a tarragon-infused cream sauce. Try it!
Root Veggie Pizza. A thin, crispy crust. Caramelized root vegetables. Asiago cheese. What more can you ask from this vegetarian pizza?
Harvest Turnovers. When the mood for puff-pastry strikes (and you know it will), why reach for an apple turnover when you can make Harvest Turnovers instead? These contain apples, onion, bacon and cheddar cheese. And they are knock-your-socks-off delicious. Here’s the recipe.
Classic Tomato Pie. Take perfectly ripe tomatoes, place them on a bed of store-bought biscuits, top them with basil, mayonnaise and cheddar cheese, bake the works until puffed and golden, and what do you get? Why, only the most delicious thing on earth.
Sugar Cookie Tartlets. These beauties are made from sugar cookie dough that you form into little tarts. Filled with lemon curd, they make the perfect tea-time or after-school treat. The recipe.

Back to school tomorrow here in WI. I know some kids who can’t wait, but I do not have those kids. My boys are not so thrilled with the idea so we will make your blueberry bars today (which they love) for a special treat in their lunch box.
I finally tried your angelic fritters on Sat. My neighbor keeps proudly giving me enormous zucchinis and I don’t have the heart to tell him they should be picked earlier. I figured fritterizing them would be a good solution and it most certainly was. Delicious!

Your boys have my sympathy. As a child, I didn’t welcome the start of the school year, either! So glad you enjoyed the zucchini fritters. And you are right — the smaller zukes are always the most flavorful.
