Hello, dear friends — Here’s the recipe for the Roasted Red Bell Pepper Salad that was featured in my “Three Course Nigella Lawson Dinner” video on YouTube. The recipe isn’t included on Nigella’s website, so I have written out a printable adaptation for you.

The salad — a colorful concoction of roasted bell pepper strips, olive oil, lemon juice, crumbled Feta and sliced almonds — is a breeze to make and a joy to eat. I think you will love it! xKevin

Roasted Red Bell Pepper Salad

Sweet roasted peppers (from a jar), tangy feta cheese, and crunchy sliced almonds. A delightful starter for any dinner party.
Prep Time5 minutes mins
Course: Salad
Servings: 2

Ingredients

  • 1 16 ounce (454g) jar of roasted red bell pepper strips, drained
  • 1/2 cup (a handful) of crumbled Feta cheese
  • 1 tablespoon extra virgin olive oil
  • The juice of half a lemon
  • 1/3 cup (a modest handful) of sliced almonds
  • A sprinkling of coarsely chopped flat-leaved parsley

Instructions

  • Spread the drained peppers on a platter. Top with the feta cheese, olive oil, lemon juice, and sliced almonds. Garnish with the chopped parsley. Serve cold or at room temperature.
