This recipe from Gloria Koch is a winner. The bread has a mild taste, a moist crumb, a crisp crust, and — are you ready for this? — only one gram of carbohydrate per slice! Here’s the video and printable recipe:

Gloria Koch developed this mild tasting bread that contains only 1 gram of carbohydrates per slice (the whole loaf makes 16 slices). Delicious for sandwiches and toast.
Ingredients
- 12 ounces full-fat cream cheese
- 1/4 cup heavy cream
- 1/4 cup olive oil
- 1/4 cup (4 tablespoons) butter, melted
- 4 large eggs
- 1 2/3 cup unflavored whey protein isolate
- 1/2 teaspoon salt
- 1/3 teaspoon baking soda
- 1 teaspoon xanthan gum
- 1/4 teaspoon cream of tartar
- 2 1/2 teaspoons baking powder
Instructions
- Center the oven rack; heat the oven to 325°F. Also, grease a 9-inch loaf pan, and line it with parchment paper.
- Put the cream cheese in a large bowl, and microwave until soft -- 1 minute or slightly longer. Beat the cream cheese (use electric hand-held beaters) until fluffy -- about 30 seconds. Then beat in the heavy cream, olive oil, melted butter, and eggs. Set aside.
- Set a wire-mesh sieve over a medium-size bowl. Add the dry ingredients to the sieve, and then tap, with your hand, the side of the sieve to sift the ingredients into the bowl.
- Add the dry ingredients to the wet, and gently fold with a spatula to combine. Pour the batter into the prepared loaf pan.
- Bake in the preheated oven until the crust turns golden brown, and a wooden skewer inserted into the center of the bread comes out clean -- 45-50 minutes.
NOTE: An optional ingredient in Gloria Koch's original recipe: 2 drops liquid artificial or plant-based sweetener. I did not use any sweetener at all when I made the bread.

Does this bread have a similar flavor and density to “fat head dough”? I have tried that as both bagels and cinnamon rolls- and in both cases the final result was “ok”….not great, but edible and serves it’s purpose. Curious to know if you tried it toasted too?

Hi Brenda – I have not tried fat head bread, so can’t make a comparison. This Soul Bread toasts up beautifully — I’ll toast a slice now, and post a picture! (Update: DONE.)

Hi Marsha – Gloria Koch’s recipe called for Whey Protein Isolate, so that is what I used.
Hi Arlene – As I mentioned in the video, whey protein isolate and xanthan gum are new ingredients for me. No need to make this bread if you are not on a low-carb diet. I’ll go back to regular flour-and-yeast bread after I drop a few more pounds!

Would it be possible to post the Nutritional Facts for this bread or any of your keto/low carb items? My husband and I are on a Keto WOE (way of eating) and our entire bodies are thanking us at ages 69 & 72! We feel soooo much better. Kevin, love, love, love, your Keto recipes. We are a keto/low carb household and both my husband and I have left 50 pounds of our former selves behind! No turning back now! Don’t have whey protein in the house, but I’ll be getting some so I can try this recipe. We have found a Joseph’s Flat Flax, Oat Bran and Whole Wheat Lavash Bread at our local Walmart to be a great substitute for tortillas and other wraps. Only 5 g carbs in half a wrap which is more than enough for a good “sandwich.” Keto on!

There was a lot of controversy about the Atkins Diet way back and how healthy (or not)
it was for people. I guess it works but could it be damaging to one’s health? (I haven’t
done much research about it or Keto.)

I have researched Keto to the point my eyes were going to POP OUT! It IS the way to go. It is -whole food, organic (if you can), no boxed chemical laden Factory products. Eat clean whole foods and lots of the ‘stuff’ we were always warned to shy away from – I’ve dropped 3 sizes and have lost 30 pounds this past year (started the KETO WOE 10/1/17) If you “really need” a ‘familiar’ food product in your life – just eat it… but OWN the fact that you will have just given up at least 3 days of your health to get back into ketosis.
LOVE LOVE LOVE that you jumped on the ‘keto wagon” Kevin. It is the healthiest way to eat… not just to lose weight … but for your TOTAL MIND BODY & SPIRIT!
I am 65 years old and I feel GREAT! When I walk out of a grocery store I get the urge to jump on the back of my cart and RIDE IT to my car 🙂

I made a batch of this after trekking around a bit to find a store which sold whey protein isolates without chocolate dipped banana flavoring! Turned out well: trying a batch tomorrow with some jalapenos and some frozen corn kernels (yes, I know, not so low carb, but it *is* Thanksgiving!) to make faux corn bread. Will let you know how it turns out!

Kevin–Keto diets are becoming more and more common for those battling certain types of cancer and they can extend life by years. They are just whole food, no processed food, and for cancer patients they limit carbs to only 30 to 50 a day. I’m not sure about the other ingredients in whey protein isolate but any bread, for people dealing with cancer and a keto diet, is better than no bread at all. I’ll give this recipe a try.

I have been on again, off again, the keto diet over a year and have lost about 25 pounds. I have diabetes and this was recommended to me by my nurse practitioner who also follows it. I am lucky to live in Raleigh, NC close to Durham (and Duke Healthcare) where there is a physician who is a pioneer in this type of diet. He can be found on-line with Facebook, Adapt Your Life, and on You Tube, Eric Westman, MD. He has been following this diet for 20+ years and we attend a monthly meeting in Durham where we have a wonderful keto meal.
