Kevin's Chocolate-Orange Cookies
A deliciously-refreshing treat for tea-time or anytime!

Ingredients
- 1 1/2 cups (195g) all-purpose or "plain" flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/3 cup (80g) granulated white sugar
- 1/2 cup (80g) packed dark or light brown sugar
- The grated zest of 1 large orange
- 1/2 cup (113g) unsalted butter, softened to room temperature
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 teaspoon orange extract
- 1 cup (160g) semi-sweet chocolate chips
Instructions
- Whisk together the flour, salt, and baking soda in a medium bowl. Set aside.
- Put the sugars and the orange zest in the bowl of a stand mixer. Using your fingers, rub the zest into the sugars until fragrant.
- Add the butter to the sugar mixture, and beat at high speed until the mixture turns light and fluffy. Then beat in the egg, followed by the vanilla and orange extracts. At low speed, beat in the flour until it disappears into the wet ingredients.
- Using a spatula, fold the chocolate into the cookie dough.
- Use a cookie scoop or your hands to form 1-inch diameter balls of dough. Space the dough balls about 2 inches apart on a parchment-lined baking sheet. Use your fingers to slightly flatten the balls. Chill in the refrigerator or freezer while you preheat the oven to 350°F or 180°C.
- Bake until the cookies turn golden -- 12 minutes for soft cookies, and 15 minutes for crisp. Cool on the baking sheet for 10 minutes, and then transfer to a wire rack to cool completely. Enjoy!

So many questions, Kevin – do silver pots impart any bitterness or other flavor to the liquid?
I can almost smell the orange in the cookies – I’ll make these cookies this week! Have you ever made your own orange or lemon extract? I plan to as soon as I can get good organic citrus.

I love this recipe Kevin! I made my dough yesterday and will be baking them off this morning. They smell and taste wonderful. I omit the salt and use baking powder instead of soda because of salt intolerance, and they turn out great. I added almonds and only 1/2 cup brown sugar for today’s batch. So I will see how that goes. My chocolate chips are sweet so I had to cut back on sugar. I can’t wait for coffee and tea time today!
