Please enjoy this Baked Oatmeal with Blueberries recipe from my “Easy Freezer Breakfast Meals” video that was recently published on YouTube. Baked Oatmeal seems a healthy choice for breakfast. Not only is it nutritious and delicious, but it freezes perfectly well. I like to cut it into squares for a grab-and-go breakfast!

Baked Oatmeal with Blueberries
Ingredients
- 5 large eggs
- 3/4 cup (188g) unsweetened applesauce
- 1 cup (285g) Greek yogurt
- 1 cup (236ml) whole milk (or the milk of your choice)
- 2 teaspoons pure vanilla extract
- 1/2 cup (118ml) honey
- 6 cups (510g) old-fashioned rolled oats
- 3 teaspoons baking soda
- 1 teaspoons salt
- 1 cup 1 - 2 cups cups (at least 148g) fresh or frozen blueberries
Instructions
- Preheat the oven to 350°F (177°C). Grease a 9x13-inch baking dish.
- Whisk the eggs in a large bowl. Then whisk in the applesauce, yogurt, milk, vanilla, and honey. Add the oats, baking soda, and salt, and then stir, with a spatula, to combine. Make sure all of the oats are moistened. Fold in the blueberries.
- Pour the mixture into a greased 9x13-inch baking dish.
- Bake until the oatmeal is caramelized on top, and a skewer inserted into the center comes out clean -- 45-55 minutes. Cool to room temperature on a wire rack.
- When completely cool, cut the baked oatmeal into squares. Enjoy right away or freeze for later. The squares thaw quickly, or they can be reheated briefly in a microwave oven.

Yummy and easy. Lots of expensive ingredients is why I have a 4 *’s but taste wise a 5 *.

This looks delicious and I’ll definitely be making this. I’ll probably swap out berries with apples and walnuts with some cinnamon. However, we never have greek yogurt handy. What might you suggest for swapping out? Whipping cream? Coconut milk. That’s what I have to hand at the moment. Many thanks in advance!

Your breakfast ideas are so practical for any type of living circumstance – just perfect for my son (single Dad) and his 4 elementary aged children (6,8,10 & 12)! The next time I visit the Family I will spend a day preparing the recipes to help breakfast times “fuss- free”, yummy and chock full of nutrition. The Blueberry Oatmeal squares are a perfect snack at a recess break. Of course I’ll create these in my own kitchen first for that “taste test”.

I’m writing this morning with 5 stars. I sliced and froze your baked oatmeal into bars and am having one with my coffee right now.On its own, it is a heart-healthy recipe with ingredients I have on hand. But it is also moist enough to enjoy without adding butter. This recipe is a gem.

This is a delicious recipe. I wanted to pass it along to a friend who is trying to eat healthier, but she was needing a carb count for diabetes. Is there any kind of nutritional information, Kevin? I am in love with this recipe so much it has become my breakfast standard. I have a long commute to work and it’s great for grab and go on the run each weekday!
