August Giveaway: Ricki Carroll’s CheeseMaking Kit

EVERY TIME I’VE OFFERED Ricki Carroll’s mozzarella/ricotta cheesemaking kit in a random drawing, the response has been overwhelming. Even Ricki Carroll (whom Barbara Kingsolver praised in her book Animal, Vegetable, Miracle) has taken notice, for she has volunteered the kit above for this month’s giveaway. The pleasures of homemade cheese, and how you can enter to win the kit:

If you only know tasteless, rubbery mozzarella, and bland, gummy ricotta from the supermarket, get ready for a colossal treat. I can tell you from my own experience that these two cheeses, when made from scratch, offer incredible flavor and texture. Try making them once, and I suspect you’ll never buy their commercial counterparts again.

Ricki’s kit contains enough rennet and citric acid to make 30 batches of cheese. It also contains a thermometer, and a large piece of butter-muslin. Butter muslin is used for draining the whey from ricotta.

    Cary – I use ricotta as a spread for toast, and as a dip for raw veggies. Another reader told me about Ricotta Pie — lots of recipes for this creamy sweet dish on the internet.

    We are huge fans of fresh mozzarella, and my kids and I would love to try our hands at making it. My son took a homeschool class to try and learn but it did not turn out well for any one in the class ( teacher realized later she had used the wrong milk ).

    Hi Kevin. I'm a newish urban homesteader. Actually an old back to the lander from the 70s. Children, work and life happened, I found a home for the chickens and grassed over the garden. About a year ago I got the bug again and an now tearing everything apart and planting and harvesting my first lettuce. I am in LOVE with getting back to canning and making my own jam.     I really really would love to win this kit! We purchased a small farm last year, and have been slowly working our way into a self sustaining lifestyle. This kit would definately come in handy with the goat's milk we will have in the next few weeks! Thanks for the chance to win it!
