Giveaway: Pullman Loaf Pan

HOW DID I PRODUCE the perfectly rectangular loaf of Pain de Mie (French sandwich bread) you see pictured above? By baking it in a Pullman pan. A Pullman pan is a bread pan with straight sides and a lid that slides over the top. The lid keeps the bread from forming an arch as it bakes. This flat-topped, straight sided loaf is a pleasure to slice. And its entire crust can be removed with just 4 flicks of a knife. Frankly, I’m enjoying my 13x4x4 Pullman so much that I bought a second one to give away. Who’d like to win it in a random drawing?

You don’t need a special pan to make sandwich bread. As you might recall, last month I produced a fairly straight-sided loaf (pictured above) by simply placing a weighted casserole dish over a regular 8-cup bread pan. But if you want a classic, long and rectangular loaf, a Pullman pan is definitely the way to go.

The pan I’m giving away holds 12 cups of dough. Thus I’ve added to my old recipe for Pain de Mie another, larger version which will accommodate a 13x4x4 Pullman pan.

    I have a plastic “dough rising” bowl that my aunt gave me years ago because of all the bread I make. Supposedly the static from the plastic helps with the rising but I’m not sure. I still use it all the time, it has a clear lid so you can see the progress of the dough. I just butter the sides and lid and throw the dough in and wait for it to be ready to shape into loaves or rolls.

    My favorite ‘gadget’ is my LeCruset enameled dutch oven for baking gorgeous crusty loaves of peasant bread using the no-knead method! YUM!! All breads are good and I love how they fill the house with their yeasty aroma!

    I love making bread. I can make it in my Kitchen Aid but love the energy expressed in kneading by hand. Is anything better than homemade bread warm from the oven?

    Not sure it is officially a gadget, but I can’t imagine my weekly bread baking without the help of hotel shower caps covering my loaf pans for the final rise… no more concerns about impact from drafts or the low humidity in the house, especially during the winter months!

    A big (pink ;-)) plastic bowl, an old wooden spoon that will hopefully last me another ten years and my cast iron dutch oven for no knead bread!     Hello again Kevin, i use an old crockery bowl and nice heavy loaf pans or just do a free form artisan loaf. Making bread is almost as theraputic as digging in the garden.

    Have you ever read Julia Child’s ‘My Life in France’? There is a chapter that is an eye opener on how she learned to make french bread and the story of that recipe going into ‘Mastering the Art of French Cooking-Volume 2’. This book was so good, but this particular chapter was amazing!

    I’d love to win this pan. Of all of my kitchen tools, my bread machine would be the one I use the most. But only for kneading the dough. I can put all of my ingredients in the machine and it mixes it up for me while I work on something else.

    I’m not the cook in this house, my husband is… But I just got him a KitchenAid mixer for Christmas! It cost as much as my first car… but it’s AWESOME! He’s trying to learn how to bake (which is why I got this for him) This bread pan would be a great incentive for him to try bread!!!!! (and I do love fresh bread! lol)

    My favorite gadget for bread making would be the dough hook on my mixer. Although I do knead some things by hand, having a dough hook really helps out a lot.     Greetings from NH!
    Have been baking bread for 36 yrs. my long term fav tool is my industrial size and strength of my Kitchen Aid mixer that was handed down to me from my mother in law and is at least 50 yrs old, never had repaired, carried cross country in our move from Seattle 15 yrs ago and can’t do without! My new fav tool are my cast iron pots( which I have used for years for soups and stews!). I now have two dedicated to making crusty round artisan loaves!
    My first loaf of bread I tried to bake was a dismal failure, hard as a rock, could have used as a football! I was 22, newly married and my mother in law came over and consoled me and stood by and patiently mentored me, till I got the right “feel” and garnered success! We didn’t have the Internet, no blogs, or utube videos on technique so having a mentor was crucial, and I am eternally grateful for her guiding hand and heart.

    I have made this Pain de Mie twice since seeing the recipe in your newsletter and it is delicious. It freezes well and makes great toast. I used a regular loaf pan with a casserole with a brick in it on top and it worked fine, but I would love to have the pullman pan. Love the ideas in your newsletter-collecting milk jugs now to start seeds.

    I’ll be honest…I’ve never made bread! I’ve made dessert loaves, but not regular bread. I remember my mom baking bread…once and it was delicious. No gadgets, just a big bowl for it to raise and a loaf pan.

    Kevin, I LOVE LOVE LOVE your emails…I’ve started my winter sowing milk jugs/soda bottles/clear plastic containers…I have neighbors and friends all saving their bottles and jugs for me. In return, they will receive some plants in the spring and vegetables in the summer.
    No one really wanted to start his or her own winter sowing bottle collection, preferring that I be the gardener…Wait till they see how easy it is! Many thanks for your creative and super helpful ideas. I truly appreciate your generosity in sharing all that you discover for the garden and the house.
    I haven’t baked much bread in my adult life..which is funny, because my grandfather owned a bakery, and I grew up pounding on balls of dough in his bakery when we visited him twice a week…

    My second bread machine in 20 years jumped off the counter last week. The pullman pan would jump start my desire to make bread the old fashioned way – with a little elbow and upper arm grease.

    I subscribe , and liked. Thank you for the review and giveaway. I use a bread machine. I have been wanting to to try new ways of baking because I’m not always thrilled with the results. My zucchini bread would be awesome with this Pullman loaf pan. It’s the best sandwich bread that I make but would be perfect with a straight top.

    Anything that comes out of the kitchen is my favorite – I make a German bread called Stretzel – a sweet white bread with a molasses dough mixture rolled into it – – delicious. My Gramma us to make this for me when I was a kid. Would like to try making it in this new pan.

    I dunno about gadget, but I’m loving the tip I picked up in Cooks’ Illustrated, to turn your oven into a proof box by placing a loaf pan in the bottom and putting 3C boiling water in it, and your dough on a rack above it. Works great!

    Hi Kevin…you must be channeling our house and the people in it today…we have been experimenting with breads for quite some time now…my youngest daughter has Celiac and our two year old grandson has allergies to egg and dairy. (today we made egg-less,dairy-less sugar cookies for his 2nd birthday!), anyway…we love bread in this house and my search for the best recipes for loved ones with issues is an ongoing adventure in baking…then there are the rest of us…the carb addicts that LOVE breads in any form…I would love to have this pan to make sandwich breads, toasting bread for jam with tea and anything else my hubs and I could possible want… during those times that it is just us in the kitchen. BUT, an old school chum and childhood friend and I just started our own blog, where we will sign up for fb and twitter w/ the blog name, then hopefully I can get in on some of the goodies at a later date.     Ah bread.. there is nothing like a beautiful, warm, fresh, made-from-home with love loaf of bread! I used to fancy my breadmaker, until I decided that I would like to do all the work by hand. I don’t have anything particularly special for this job, can’t afford it for one. But I do enjoy working with my hands, kneading the dough if the recipe calls for it, using proper measurements and of course the trusty bread pan.     I have a great bread recipe that requires no kneading- just leave the wooden spoon in the bowl and swipe it through every so often. And it’s really good!. it would be great baked in a Pullman pan. Just sayin’.

    Thanks so much for the offer. I have a collection of old bread bowls and not only are they useful but so pretty on the shelves of the hutch. I have been married for almost 52 years and knead my dough by hand but the older I get I am considering kneading with the dough hook on my Kitchen Aid. I have put that off because I love the feel of the dough in my hands. But since others use the dough hook I may try it for my next batch. I have a hyacinth that is opening now and am so excited for that heavenly fragrance – they truly do feed the soul.

    My favorite tool is the light in my oven, it allows my bread to raise with out fear of drafts.

    I use my breadmaker only for the kneading aspect of bread making. I use a lot of sandwiches ( for when I’m at work) so this pan would be WONDERFUL. Thanks for your kind offer.

    I used to make this bread with this pullman pan at the Pacific Institute of Culinary Arts. i was just searching the recipe and your blog came up, what a great find! I didn’t know the name of the pan and I’ve never seen one for sale. I have two german bread raising baskets (brotforms) that I enjoy, I feel connected to a little piece of my heritage when I use them.

    I LOVE my stoneware breadpan, but I would also LOVE to score this Pullman loaf pan for my husband, who is a recent graduate of culinary school (at age 58) and who thoroughly enjoyed his segment in baking and pastries. I asked him just now if he ever heard of a “Pullman” bread pan—his eyes lit up and he launched into its origins and uses. I’m hoping that the “random” winner is us!

    Always enjoy reading A garden for the house. In all my years of making bread

    Favorite bread baking gadgets are my enameled dutch oven and 10 year old sourdough starter for no-knead bread. The sourdough also goes into pizza dough and pancakes/waffles too. Would love to try this pan!

    I am new to your blog and loving it!!

    My Dad taught me how to make bread when I was little. I love to use my pizza stone to make free form loaves but would love to try the Pullman pan – looks perfect to make Panini bread!

    Cool! I’ve never seen a pan like that! I usually use my Bosch mixer for my breads, so that would be my tool. But once in awhile I’ll kneed by hand and then I’m my own best tool.

    i have a bread machine also but my all time favorite is my iron skillets or my hands you see if we lose electricity i can count on them be it on fire place –grill– or pit — or a stick — im not a great bread baker i do love to learn i say trial and era i love tortillas but also love all kinds other breads as well // thanks for a great article <3 cheryl sigler on fb

    My Grandmother’s pottery bowl and my bread stones are my favorite tools. I bake a variety of breads, some of which I start with mixer but I love to knead with hands. Nothing like satisfaction of beautiful loaf you have made.

    tina – I bought mine (and one for this giveaway) from a kitchen-supply store called Marx Home in Hudson, NY. Unfortunately the store does not ship. But I think you can buy a pullman pan on Amazon.

    I love making bread. I have 7 grandsons, 3 great grandsons, plus 2 sons that love to eat. I have them spoiled to homemade bread. All I have are regular size loaf pans. I need this Pullman Loaf Pan then I could make loaves that were bigger than 2 lb loafs. These boys love sandwiches, toast for breakfast. I have a bread machine that is nearly worn out from use & I am going to have to buy another one. I make hoagie buns, hamburger buns, bread sticks, and I would love to have pans for all of these. I’m 72 now, just had a Birthday the 5th of April and dear Arthritis won’t let me knead the dough, machine does the kneading.

    Hi Kevin, I watch you everyday, about an hour after I do my chores and prepare dinner. Last night I made your chicken with forty cloves of garlic. My husband and I enjoyed it very much. I added it to the top of my chicken receipes..I would love one of those pans as I make alot of different breads . I also suscribed.
