Goat Cheese Bites
An adorable (and delicious) appetizer that requires almost no effort to make.

- 8 ounces goat cheese, softened to room temperature
- 1 cup finely-grated Parmesan cheese
- Chopped chives, chopped almonds, or a combination of both
- Pretzel sticks
Put the two cheeses in the work bowl of a food processor. Process until fairly smooth -- about 20 seconds.
Scoop the cheese mixture into a bowl. Form the cheese into bite-size balls, roll them in the herbs and/or nuts, and place them on a serving tray. Insert a pretzel stick in each ball, and serve!
