Breakfast and Brunch Recipes: Pancakes and a Waffle
Chickpea Pancakes with Wild Blueberry Sauce. These nutty-tasting, gluten-free pancakes are high in protein and fiber. And oh, the sauce! I make it with frozen, store-bought wild blueberries, plus local honey and a dash of fresh lemon juice. The flavor combo is pure poetry. Get the recipe.
Sourdough Pancakes. I probably love these pancakes more than I should. They are slightly tangy, slightly bread-y, and screamingly delicious. They are also easy to digest, since the flour in the batter is completely fermented. Ready for a new taste-sensation? Get the recipe.
Low-Carb Cottage Cheese Pancakes. What makes these pancakes low in carbohydrates? Well, I use lots of eggs and cottage cheese. But I use very little flour. The eggs and cheese provide a light, fluffy, creamy-dreamy deliciousness that is utterly satisfying. So you can keep your Adonis-like figure and eat your pancakes too. Get the recipe:
Butternut Squash Pancakes. In the depths of winter, nothing warms my soul like Butternut Squash Pancakes. Sure, the cakes are high in carbs. But they are also loaded with flavor. And fiber. And beta carotene. And what a soothing perfume! The batter — which I’m always tempted to drink — is infused with cinnamon, nutmeg, vanilla, and pure maple syrup. Get the recipe.
Crispy Orange Juice Waffles. I’ve decided that Orange Juice Waffles are the best waffles in the world. They’re crispy outside, tender inside, and fabulously infused with a sunny citrus scent. Need a good reason to drag out the waffle iron you haven’t used since 1992? The recipe.
Baskets and Nests
Eggs in Bacon Baskets. These are virtually carb-free. They’re also easy to make, quick to bake, and chic to serve. Serve them on a pretty platter for a brunch party, or on a bed of lightly-dressed arugula or baby kale for a simple supper. Leftovers baskets are terrific for breakfast on-the-go. You can eat the baskets out of hand. Get the recipe.
Eggs in Sweet Potato Nests. What’s so great about eggs baked in nests of shredded sweet potato? Everything! They’re glamorous, healthy, and knock-your-socks-off delicious. Serve them for brunch, lunch, or dinner, and everyone will think you’re a genius. Get the recipe.
Make-Ahead Breakfast and Brunch Casseroles
Creamy Gratin of Hard Cooked Eggs. For a breakfast or brunch party, nothing beats this Creamy Gratin of Cooked Eggs. It’s easy to make, gluten-free, and rapturously-delicious. It’s also cook-friendly, because you can make the whole dish a day in advance, and then simply pop it in the oven shortly before your guests arrive. Get the recipe.
Make-Ahead Spinach and Cheese Strata. Take some spinach, cheese, and bread cubes, soak them in a custard-sauce overnight, bake until puffed and golden the next morning, and what will you have? The crowd-pleasing uber-delicious Spinach and Cheese Strata you see pictured above. Get the recipe.
Make-Ahead Raspberry and Goat Cheese Strata. I’m talking about juicy raspberries. And tangy goat cheese. And cubes of soft bread that’s been soaked, overnight, in a vanilla custard sauce. It’s an easy dish to schedule for a party. Make it a day in advance, and then bake it off exactly 1 hour before your guests arrive. Get the recipe.
Dreamy Cinnamon Rolls. These are everything they’re supposed to be: sweet, sticky, and so delicious they defy description. If I can make them, YOU can make them. Get the recipe.
Blueberry Danish. I’m obsessed with puff pastry Blueberry Danish. They’re easy to make, gorgeous to serve, and divine to devour. Don’t pretend you don’t want to devour one of ’em right now. Get the recipe.
