Smoked Trout Tartines (Open Face Sandwiches)

If you enjoy smoked fish (I certainly do), then you will love, love, love these open-face sandwiches, or “tartines.” Nothing could be easier to make. Just mound a mixture of smoked trout, heavy cream, Parmesan cheese, and chopped  chives onto long slices of toasted bread, and then pop the works under the broiler for a minute or two. Serve the tartines for luncheon or supper, and trust me, please, you won’t be disappointed. Here’s the video (and printable) recipe:

Note: You can buy smoked trout in almost any supermarket.

Another note: Feel free to substitute smoked salmon for the trout.

A final note: I hope you don’t mind self-filmed videos. I’m trying to keep things…real.

Smoked Trout Tartines (Open Face Sandwiches)

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: 2-4 servings, depending on appetites

A savory mixture of smoked fish, heavy cream, Parmesan cheese, and chopped chives, generously mounded onto thick slices of toasted bread, and then broiled until brown and bubbly. Screamingly delicious for lunch, dinner, or anytime.

Ingredients

  • 8 ounces smoked trout (or smoked salmon)
  • 1/4 cup heavy cream (plus more for drizzling)
  • 3/4 cup finely-grated Parmesan cheese
  • Coarsely-ground black pepper, to taste
  • Chopped, fresh chives -- 2-3 tablespoons, plus more for garnish
  • 4 long slices of bread, about 1/2-inch thick, lightly toasted on both sides

Instructions

  1. Put the fish in a bowl, and remove and discard skin. Using your fingers or a fork, mash the fish until it flakes into small bits. Stir in the cream, cheese, and chives. Mound the mixture on top of the toasts, finishing with a little drizzle of cream and a sprinkling of Parmesan cheese.
  2. Broil until the fish mixture bubbles and turns spotty brown -- about 2 minutes.
  3. Plate the tartines, and garnish with chopped chives.

    Thank you for another great recipe. If you get to FLA make sure to try the Smoked Mullet Dip. The only thing I miss from the state that I grew up in is Mullet.

    We have delicious smoked mullet in abundance in Florida and think this would be a great use for a few pieces. I recognize the dog language – she wants a piece! My dog says the same thing everytime she sees me sit down in ‘my chair’ with a plate of whatever. She is very insistent just as Avery is.

    I forgot to say that my sister-in-law is famous for her chicken salad and she uses whipped cream as the base instead of mayo. That may be another way to incorporate the smoked fish into your topping. Can’t wait to try.

    Another simple recipe I have to try. I’m always looking for easy/delicious side snacks. I would have eaten the burnt toast….LOL. Nothing a little butter and peanut butter can’t fix.
    I have been meaning to tell you about the BEST sheet and baking pans, USA *PAN and they are available at Bed Bath & Beyond (don’t forget your coupons; never expire even though they all have an expiration date.) I bake Bacon on them with (or without) a little water; it makes the bacon even better, chicken, cookies etc and NOTHING sticks or stains! Just take the pan to the sink, run water over it and it is CLEAN….then I use a little soap to remove any greasy feeling on the pan.
    USA Pan 2-Piece Bakeware Set – You’ll wonder why you didn’t have them before. 🙂 The two piece set is the better buy…I’m just say’n.
    You are doing great making your own videos, and saving on your expenses is a good thing. We get the recipes at no cost and no commercials so can’t complain.
