If you enjoy smoked fish (I certainly do), then you will love, love, love these open-face sandwiches, or “tartines.” Nothing could be easier to make. Just mound a mixture of smoked trout, heavy cream, Parmesan cheese, and chopped chives onto long slices of toasted bread, and then pop the works under the broiler for a minute or two. Serve the tartines for luncheon or supper, and trust me, please, you won’t be disappointed. Here’s the video (and printable) recipe:
Note: You can buy smoked trout in almost any supermarket.
Another note: Feel free to substitute smoked salmon for the trout.
