Pico de Gallo is a simple salsa of diced veggies, a splash of lime juice, and a sprinkling of minced cilantro. I love to spoon the colorful condiment onto tortilla wedges that I bake to extra-crispy perfection in my very own oven. Looking for a fabulous make-ahead appetizer? Make this dynamic duo once, and you will make it again and again. The Pico de Gallo is fresh and healthy, and the oven-baked corn chips are better than anything you could buy at the supermarket.
Ingredients
- 1/2 to 1 red onion, diced
- 1 or 2 paste (i.e., 'Roma') tomatoes
- 1/2 to 1 jalapeno pepper, seeded and diced
- Juice of half a lime
- 1/2 bunch cilantro, coarsely minced (2-3 tablespoons)
- Salt and pepper to taste
- 4 or more corn tortillas
- Optional: Olive oil spray
- Optional seasonings: salt, chili pepper
Instructions
- Put the salsa ingredients in a bowl, and toss to combine. Cover and place in refrigerator for at least 30 minutes to let flavors develop.
- Heat the oven to 400°F (205°C). Cut the tortillas into quarters, and arrange the wedges in a single layer on a baking sheet, spacing each about 1/4-inch apart (do not crowd the wedges).Lightly spray the wedges with olive oil spray, if desired, and then top with the optional seasonings. Bake until crisp and lightly browned -- about 12 minutes. The tortillas will continue to crisp as they cool on the baking sheet.

I like the time spent to slice and dice by hand. It’s meditative and relaxing. Veggies have to be sliced anyway to use that gadget, so not a lot of time is saved and it’s one more thing to wash and find space to store.
I’m right with you on the cilantro! I don’t even remember when I “transitioned,” but used to hate it and now love it.
That great-sounding CRUNCH made me hungry!

I love all kinds of salsas and have made few different kinds, including salsa that has avocado as the star ingredient and also a salsa that has radishes as the main ingredient, plus a few more. So Kevin, I will gladly add your recipe to my salsa recipes. I already know that I will be loving it, as it has everything yummy in it that I like. I have never tried making homemade corn chips, so maybe I will give those a try too. You mentioned in your video who you used to not like cilantro, but that now you do. That made me think of how when I was a kid, I used to not like things like raw onions, or black olives, but now I love both and eat them regularly. Funny how we change over time. Oh by the way, love your blue shirt = )

Wow, love your presentation and seeing you in the new kitchen. It’s all good. I just made Salsa yesterday for dinner using many of the same ingredients right from the garden, adding my own garlic and a can of black beans. The aroma of cilantro makes me want to climb right into the bowl. The freshness of the ingredients and the crunch of the corn chips – all irresistible. Enjoyed this video!

Just wanting to let you know Kevin, that I did make the Pico de Gallo Salsa and oh, it is SO good. I made a much larger portion of it because I figured we would be loving it and wanting more….I was right. Thanks for another easy yummy recipe.
